Environmental monitoring includes both pathogen and non-pathogenic indicator organism verification programs. They serve different purposes although both provide evidence that microbial control programs are in place and working. Where contamination of a Ready-To-Eat food with an environmental pathogen is determined to be a significant hazard, a facility must develop an environmental monitoring program to verify the implementation and effectiveness of preventive controls in protecting food from contamination with pathogens in the process environment. Monitoring for indicator organisms is also an important verification activity assuring compliance to GMPs and a hygienic manufacturing facility.
